Yellowtail belly can be described same as A5 Japanese Wagyu’s Short Rib!! Buttery melty taste, but with good meaty flavor.
Yellowtail can be as rich as Toro, smooth and buttery with a deep smoky taste, but not as overpoweringly fatty. It is not seasonable, but the taste is stable through a whole year.
Our Yellowtail is harvested in Goto island, Nagasaki, Japan, where especially has strong current which is known for lean yellowtail with moderate fat level and premium taste and texture.
