Zabuton or Haneshita (Japanese): Denver or Chuck Flap
This is a rare part of the shoulder loin that is located on the rib side of the shoulder and is the most well-marbled part of the shoulder loin. It is one of the most marbled parts of the beef. Only 3 to 4 kg can be taken from one cow.
It is characterized by its tenderness and melt-in-your-mouth texture. It has a very elegant taste with no peculiarities.
